Cheery Morning

Valdez was greeted with this sunrise this morning. Today was a crunchy cold. No rain or snow.

Not too much planned this weekend except for packing for my visit to Whole Wheat Radio . oh yah, and butchering up a half of cow moose Mr. FishTaxi got with his brother on a cow permit in Delta. Lots of work but well worth it. He's frying up some backstrap now.

good job Mike!! (and brother) Dave said Delta is where he saw his first moose in the wild.

My freezer is full or you could send me some. Can't believe I filled it up so fast. 4 whole chickens and a turkey plus some other stuff. Didn't take me long!

I'm looking for a recipe to make pie crust with soy flour. Let me know if anybody has a recipe. I've looked on a few web sites and nothing. I'll start experimenting today. I need a low carb pie crust! Every diabetic in the world needs one before Thanksgiving!

Gluten Free Macadamia Pie Crust

Yields: 8 servings

"Tastes just like a traditional pie crust without the gluten. Celiac friendly! Use in recipes that call for a graham cracker crust or shortbread crust. Perfect for any tropical pies."
INGREDIENTS:
6 ounces macadamia nuts
2 eggs
1 1/2 cups soy flour

DIRECTIONS:
1. Preheat the oven to 350 degrees F (175 degrees C).
2. Place the macadamia nuts into the container of a food processor, and blend until they reach a peanut butter like consistency. Scrape out into a bowl, and stir in the eggs and soy flour until well blended.
3. Place the dough between two pieces of waxed paper, and roll out into about a 12 inch circle. Remove the top piece of waxed paper, and invert the dough into a 9 inch pie plate. Press into the bottom and up the sides. Remove any overhanging dough.
4. Bake for 5 minutes in the preheated oven, or until light golden brown. Use in any recipe calling for a prebaked pie crust.
